Tips:
When buying, look for firm, crisp bell peppers that feel heavy for their size and are clear of spots and blemishes.
Green peppers are unripe red peppers, so they will be more bitter and acidic. Yellow and orange peppers are separate varieties.
Pepper skin can be bitter and tough. For the sweetest flavour, boil or broil the pepper and peel off the skin before using.
To clean the pepper, run a sharp knife around its green stem and pull away the core. Half the pepper and remove any remaining seeds and white skin.
