Tips:

  • When buying, look for aubergine that feels heavy for its size, with smooth, shiny skin and a slightly firm texture. 

  • Aubergine skin is perfectly edible, so non need to remove it unless the recipe specifically calls for it. 

  • To remove the bitterness and excess water from the aubergine, sprinkle it with a generous amount of salt after slicing and let it “sweat.”
